The classic pastries with baked caciocavallo and truffle cream are appetizers prepared with typical products of the Abruzzo area such as caciocavallo, a soft and compact cheese with a sweet taste, which is accompanied by a creamy and fragrant mixture prepared with truffles and anchovies. 


Ingredients (for 12 appetizers)

  • Crispy baked sheets 12
  • Black truffle 15 g
  • Caciocavallo 100 g
  • Extra virgin olive oil 5 tablespoons 
  • Garlic 1
  • Anchovies in oil 2

PREPARATION How to prepare puff pastry with caciocavallo and truffle

Start preparing the truffle cream : 1. Chop the truffle with a knife, taking care to keep some small flakes for the final decoration. 2. Place it in a mortar and add the half clove of garlic and the 2 anchovy fillets. 3. Then start crushing the ingredients. Continue adding the extra virgin olive oil 4. And continue crushing the ingredients with the mortar until they are completely mixed. 5. obtaining a sauce. Cut the caciocavallo into small pieces and place them on a sheet of baking paper 6. Now bake them at 180°C (Grill mode) for a few seconds, until the caciocavallo has melted and is slightly golden. 

Spread each pastry with the truffle cream 7. Place a small piece of baked caciocavallo on top and decorate every appetizer with a launch of black truffle!
