Pappardelle with truffle and mascarpone cream are a tasty first course, excellent to prepare for special occasions. In fact, the pappardelle are embellished with the king of mushrooms : the truffle, which is cut into thin flakes and added to the mascarpone cream. The fruity and spicy aroma of the truffle pairs well with the creamy and delicate flavor of the mascarpone, to create a refined dish which is at the same time very simple and quick to prepare.

INGREDIENTS

  • Egg pappardelle 250 g
  • Black truffle 40 g
  • Mascarpone 250 g
  • Anchovies (fillets in oil) 5
  • Extra virgin olive oil 2 tablespoons
  • Salt to taste
  • Garlic 1 clove

PREPARATION How to prepare pappardelle with truffle and mascarpone cream

To prepare the truffle pappardelle with mascarpone cream, sauté a clove of garlic over a low heat with a little extra virgin olive oil and, when it is golden brown, remove it. Add the anchovy fillets and let them melt well, then add the mascarpone and stir to amalgamate all the ingredients. Dilute, always over a low heat, for a few minutes and add salt.

In a large pot with plenty of salted water, cook the pappardelle and drain them al dente. Add the pasta to the mascarpone cream and sauté for a few moments in the pan. Garnish with thin flakes of black truffle and mix well to combine everything. 

Serve the truffle pappardelle with mascarpone cream while still hot, garnish the dishes with freshly grated truffle slices.

We recommend eating the pappardelle with truffle and mascarpone cream at the moment!

ADVISE

If your truffle is not already clean, simply brush it with a semi-hard brush to remove dirt and impurities from the surface. If you want you can use another type of pasta, particularly suitable are maltagliati, linguine or fettuccine.
