PIZZA AL TARTUFO

Today we are not only going to propose a classic pizza to which some truffle flaskes are added, we are about to accompany you on a small journey to discover the world of truffles paired with pizza!

For those who love these precious ingredients with a strong flavour, you cannot fail to try this dish. Find out what we combined the particular taste of truffles with and how we made this original pizza that will make your dinner or any other occasion really special.

Ingredients

  1. 500 grams of bread dough
  2. 250 grams of fiordilatte mozzarella
  3. 50 grams of grated parmesan
  4. One truffle
  5. Coarse salt to taste
  6. Rosemary to taste
  7. 50 Ml extra virgin olive oil 
  8. Flour to taste

Preparation 

A few simple steps are enough to obtain a delicious result :

  • Work the bread dough on a surface sprinkled with flour, then roll it out on a baking tray covered with baking paper. 
  • Grease the pasta with extra virigin olive oil, rosemary and coarse salt. 
  • Cut the fiordilatte mozzarella into large slices and place it on the pasta.
  • Sprinkle everything with parmesan and bake in a preheated oven at 200° for 20 minutes. 
  • Once cooked, take the pizza and sprinkle it with truffle flakes. 
  • Your pizza with truffle is now ready to be enjoyed!

                                                       Variants  

To give a gourmet touch to your pizza you can combine the black truffle with a cream of porcini mushrooms for a delicate result or,possibly, with pan-fried mixed mushrooms (chiodini, champignons or chanterelles). 

In the case of white truffles you can instead think of using a raw cream spread on top of the pizza as a garnish. Cut some scamorza or string cheese into slices and spread them on the pizza base. Add some sautéed mushrooms and walnuts and proceed with cooking in the pan. Finish the preparation by adding a few spoonfuls of white truffle cream and some parmesan flakes. If the cream is too thick, dilute it with a few tablespoons of water. In any case, the truffle is a creative ingredient, to be used in moderation but which allows infinite flavor combinations. Suggestions :

Truffle is an ingredient that smells of undergrowth. Pizza with black truffle undoubtedly gives earthy notes and a notable boost to your pizza. Compared to the white truffle, in fact, it has a significantly stronger taste and more intense aroma. Whatever quality you choose, always remember not to insert it during cooking, but out of the oven, to keep its aroma and consistency intact. For this reason we do not recommend adding it to your pizza dough. The same rule applies to the preparation of first courses (truffle tagliatelle for example), or second ones (for example truffle fillet). The only exeption can be made if truffle butter is used to add hot to cream egg pasta or risotto (approximately one spoon for every 500 grams of pasta/rice). In this case the truffle will not come into direct contact with the heat and will be able to release all its scent... In the case of pizza you can add a few flakes out of the oven for a final visual and gustatory touch!

Pizza is one of the symbols of Italian cuisine. Born in Naples in 1889 from the inspiration of the Neapolitan pizza chef Raffeale Esposito, pizza was prepared on the occasion of the visit of Queen Margherita, then sovereign of Italy with King Umberto I,to the wonderful city of Naples. Esposito made three different pizzas for that event, but the Queen, as we can imagine, really appreciated the one with tomato and mozzarella. 

In this recipe we have proposed a very refined and original version. The addition of truffles, a very valuable ingredient, gives the pizza an irresistible flavor and an intense aroma. You can invent tasty variations of this dish, for example you can replace the fiordilatte with buffalo mozzarella, denser and fuller-bodied, and add porcini mushrooms whose forest scent goes well with the truffle. If you love delicate flavors, you can simply add some raw cherry tomatoes cut into pieces at the end of cooking. Alternatively, you could season the pizza with a black truffle cream, sliced potatoes and raw ham.

What is certain is that this pizza will amaze both you and your guests! 

STORAGE

If necessary, you can store it in the refrigerator for a day and reheat it in the oven befor serving. Or you could freeze it after cooking.
