From September to December when the land is more humid we can delight in its most prized and sought after fruits : truffles. These are delicious mushrooms to be used in the kitchen with some precautions depending on the variety : black truffles can be eaten raw in flakes on food or cooked to create tasty dishes. The white variety, however, also known as "grey diamond" is even more valuable and must be strictly consumed raw, to fully savor the aroma, which is definitively more delicate. We suggest you a classic first course, simple but refined, to fully enjoy this ingredient for true connoisseurs : truffle risotto. A creamy and delicate base of parmesan risotto on which to drop many small precious fragments and flakes of white truffle.

INGREDIENTS
- Carnaroli rice 320 g
- White truffle 10 g
- Meat broth 750 g
- Parmigiano Reggiano Dop to grate : 50 g
- Butter : 50 g
- Extra virgin olive oil : to taste
- Black pepper : to taste
- Salt : to taste
PREPARATION How to prepare truffle risotto
To make truffle risotto, first prepare our meat broth recipe. Then, pour the olive oil 1 into a pan, heat it, then add the rice 2 which you will toast over medium heat for a couple of minutes 3. Then, pour in the hot meat broth, one ladle at a time as the liquid dries out 4, add salt 5 and cook the risotto: it will take about 18-20 minutes. When the risotto is ready, turn off the heat, stir in the risotto with the butter with the heat off 6 and add the grated Parmigiano Reggiano 7, flavor with pepper 8, mix and leave to rest in the pan. Meanwhile, take the white truffle and, using the appropriate slicer, cut into small slices 9. Now that you have made thin slices of white truffle 10, pour the risotto into each serving dish 11, garnish with some truffle flakes, season with pepper to taste and serve the white truffle risotto hot.
STORAGE
The risotto can be kept in the refrigerator for a couple of days at most but without truffle. It is preferable to consume the truffle as soon as possible to preserve its aromas and flavours. If the are any leftovers, it can be stored in the fridge wrapped in absorbent paper or a cotton cloth in a glass jar for no more than 4-5 days, taking care to change the paper every day and check that no mold forms. If you want to give an aromatic touch to the dish you can shade the rice with a light white wine with a delicate flavour.
