Tartufo uncinato Tuber Uncinatum Vitt. - "Uncinato" truffle
The Burgundy or uncinatum black truffle owes its name to the shape of the spores, which are characterized by the presence of small filaments similar to hooks (in botany uncini means barbs).
Uncinato truffle is a commonly used food ingredient in Europe and is also known by its French name “Burgundy”. This variety is grown and matures between October and January. Compared to summer truffles, it has a stronger taste and aroma and is larger in size. The inside color is dark, and when ripe, it turns dark brown with its marbling crossed by white veins.

Appearance: Burgundy truffles usually have a round, bumpy, and lopsided shape, and their surface shows a variety of colors, ranging from brownish black, dark brown, and grey-black.Additionally, it is covered with many fissures and pyramid-shaped pointed surfaces, also called protrusions, measuring 3-9 mm in diameter.
Flavor and aroma: Burgundy truffles have a light, nutty flavor with notes of hazelnuts, wild mushrooms, and garlic, while the inside of the truffle is soft, musky, and earthy.
