DESCRIPTION

Tuber Magnatum Pico in Latin, the king of truffles: "TARTUFO BIANCO D’ALBA"

White truffles are much more precious and luxurious than black truffles, and are the most expensive and sought-after edible truffles.

It is generally in season from mid-October to Middle of January and can be found in the ground at a depth of about 30 cm near the roots of trees, mainly in oak, hazel and beech forests.

Like black, it is collected by truffle dogs.

 

First Class:

- Size from 15g to 60g

- Mixed selection of small to medium size

- No major cuts

- Regular and irregular shapes

- Defined marbling and perceivable aroma.

 

Appearance: The shape is round and lumpy, and the outer part is hard, cracked, and cream-colored or yellow-brown in color. Size can vary from 10g to 200g , biggest pieces are more rarely found and they are mostly destined to White truffles auctions where they reach the highest selling price.

 

Flavor and aroma: The smell is very strong. Vague aromas of garlic, wet wood and Parmesan cheese.
Every white truffles develop its own particular aroma depending on the surrounding and the soil where it grows.
